Sweet Rice

I tried sweet rice for the first time when I traveled to Buenos Aires, Argentina. It was pretty amazing! I found a simple recipe to recreate it, and tweaked it a little. Rice pudding seems scary, but this is a very light, sweet taste that is simple, and not at all overpowering. This makes a great snack or dessert.


Sweet Rice
Serves: 4
Prep time: 5 minutes
Cook time: 5 minutes

Ingredients:
-2 cups of milk
-1 cup Minute rice
-1/4 cup sugar
-1/2 cup heavy cream
-1 tsp butter
-1 egg yolk (lightly beaten)
-1/4 tsp cinnamon
-1/4 tsp vanilla
-raisins, rehydrated in water (optional, I did not use them in this recipe.)

1. Bring milk to a boil on stove top.  Be careful not to burn it!

2. Add in rice and butter, and turn burner down to low. Let simmer for 5 minutes. Rice should be well-cooked, not al-dente.


3. Mix in cream, sugar, egg yolk, cinnamon, and vanilla (and raisins).


4. Serve. Sprinkle a little extra cinnamon on top for presentation.
